Strawberry Rhubarb Pie Smoothie
- 1 small stalk rhubarb, sliced
- ¼ cup frozen sliced strawberries
- ¾ cup unsweetened cashew milk
- ½ cup full-fat yogurt, plain
- 1-ounce raw almonds
- ½ teaspoon vanilla extract
- Liquid stevia extract, to taste
Takes , serves 1.
- Combine the rhubarb, strawberries, and almond milk in a blender.
- Pulse the ingredients several times.
- Add the remaining ingredients and blend until smooth.
- Pour into a large glass and enjoy immediately.
